Easy, Healthy, Bolognese
Introduction
Bolognese traditionally pairs rich, meaty flavours with pasta for a hearty meal that has been absolutely loved worldwide. This version retains all of the hearty flavours you expect, but with a healthier approach that doesn’t sacrifice taste. These wholesome ingredients have been carefully selected and easy to meal-prep, making this recipe not only delicious but also a breeze to whip up on a busy weeknight.
Ingredients
- 1 tbsp extra virgin olive oil
- 2 onions (diced)
- 2 garlic cloves (finely chopped)
- 500gbeef mince
- 2 bay leaves
- 1 tsp dried rosemary
- 1 tbsp dried oregano
- 1 carrot (grated)
- 1 zucchini (grated)
- 1 stick celery (finely chopped)
- 1 tbsp tomato paste
- 700g tomato passata
- Salt and pepper (To taste)
- 1 bunch fresh basil leaves (chopped)
- 300 g pasta of choice
Method
- In a large pot/pan sauté the onions and garlic in olive oil over a low-medium heat until they start to soften.
- Add in the mince, bay leaves, dried rosemary and oregano and cook until it starts to brown (approx. 5 minutes). Then add the vegetables, passata, and tomato paste. Season.
- Place the lid slightly ajar over the pan and let it simmer until the sauce starts to thicken (approx. 30 minutes).
- Once the sauce has thickened, turn off the heat and mix in the basil. Serve with your pasta of choice.
