No-Bake Peanut Butter Oat Cups
Introduction:
Craving a chocolatey-peanut butter treat, but tired of all the sugar that comes along with it? Then this is the recipe for you! With these peanut butter oat cups, you can enjoy the delightful flavours of peanut butter and chocolate, without all of that nasty added sugar! So, lets dive in!
Ingredients:
Oat Layer:
- 2 cups oats
- ½ cup honey
- 1/3 cup, natural creamy peanut butter
- 1/3 cup chopped peanuts
- Optional 1-2 tsp water
Chocolate Layer:
- 170g Dark chocolate, chopped
- 2 tsp coconut oil
Peanut Butter Layer:
- ½ cup natural creamy peanut butter
- 1 tsp coconut oil
- ¼ cup mini chocolate chips
Method:
- Line a muffin pan with baking paper (or use a silicone muffin pan).
- In a bowl, combine all of the ingredients for the oat layer together, stir until combined. Scoop about 2 tbsp of the oat mixture into the bottom of each muffin cup and firmly press it down.
- Place the chocolate and coconut oil in a separate microwave-safe bowl. Heat the chocolate on high for 20-second intervals until the chocolate is melted. Make sure you sir the chocolate in between each 20-second interval.
- Scoop 2 tsp of the melted chocolate and drizzle it over the top of the oat layer. Make sure that the chocolate is evenly distributed over the oats. Place the muffin pan in the freezer for 5 minutes, or until chocolate has hardened.
- Meanwhile, add all of the peanut butter layer ingredients into a microwaveable bowl and microwave it for 15 seconds. Stir the mixture until it is well combined.
- Next, add 2 tsp of the peanut butter mixture to the top of the chocolate layer. Add mini chocolate chips to the top of each.
- Place the muffin pan into the freezer for at least 30 minutes to an hour to allow it to set.
- Once they have set, remove the oat cups from the pan and transfer them into a freezer bag to store the cups (make sure they are kept in the freezer)
