Stuffed Sweet Potato and Hummus

The natural sweetness of roasted sweet potatoes pairs beautifully with creamy hummus and your favorite toppings—think crunchy veggies, fresh herbs, and a drizzle of lemon. Whether you’re meal prepping for the week or serving a vibrant dinner, this dish is easy to make and endlessly customisable.

Ingredients:

  • 1 Large Sweet Potato, scrubbed
  • 1 Small brown onion
  • 1 Small red capsicum
  • ¾ cup chopped kale/or spinach
  • 1 cup black beans, rinsed
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 1 tsp sweet smoked paprika
  • 4 tbsp salsa
  • ¼ cup hummus
  • 2 tbsps water
  • Optional other toppings (Bacon pieces, Cheese, Lemon/Lime, Feta etc.)

Method:

  1. Preheat the oven to 200˚C (fan-forced)
  2. Prick sweet potato all over with a fork. Cut in half and place on a lined tray. Slice the onion and capsicum, drizzle with oil, season with salt and place on the tray. Move the tray into the oven and roast for about 20 minutes.
  3. While potato is cooking, rinse kale and drain. Place the kale in a medium saucepan; cover and cook over a medium-high heat, stirring occasionally, until wilted. Add in the beans, garlic powder, onion powder, sweet smoked paprika and salsa; add 1-2 tablespoons of water if the pot is dry. Continue cooking, uncovered, stirring occasionally, until the mixture is steaming hot (1-2 minutes). Season with salt to taste.
  4. Place the potato on a plate and top with the onion, capsicum, and the kale and bean mixture. Combine hummus and 2 tablespoons of hummus ins a small dish. Add water as needed until you reach the desired consistency (more water = runnier consistency). Drizzle the hummus dressing over the stuffed sweet potato.
  5. Optional: Add bacon pieces, cheese, lemon and/or lime or any desired toppings! Optional: add a sprinkle of feta on top!
